All four are built around stainless contact parts that come apart without tools. The grinder head, plates and stuffer barrel go straight into a sink of hot soapy water; the slicer's blade guard and carriage wipe down in minutes. Break them down right after each run — dried fat is the only real enemy.
They're rated for commercial duty, but like any motor-driven equipment they do best in cycles. A practical rhythm is 30–40 minutes of run time with a short rest between batches — on a typical side of beef you'll naturally pause as you switch stations anyway. Keep vents clear and don't force-feed the grinder.
Natural hog and collagen casings are sold by butcher-supply stores and most sporting-goods retailers online — a standard hank runs $20–30 and stuffs well over 50 lbs. Match the casing diameter to the stuffing tubes included with the stuffer, and keep natural casings salted and refrigerated until use.
